The "Rock Angel" cuvée from Château d'Esclans comes from a plot selection in the Côtes de Provence appellation. This rosé wine benefits from a blend of Grenache, Rolle, and Tibouren. The harvest is carried out early in the morning, at sunrise, before ending at noon. The grapes are sorted manually and electronically. The property practices destemming and light crushing at a temperature of 7-8 ° C in order to avoid any oxidation. The drop juice is collected just before the first press juice is drawn. No maceration is carried out. The two juices are then partially vinified in half-muids of 600L and in stainless steel tanks, the temperature being controlled there each time.
